I woke up really early this morning because of a cough (allergies). After laying in bed wide awake forever and some more, I decided to finally get up and make breakfast. These fluffy, healthy, high protein and fiber pancakes made my morning much better.

These pancakes will be making their way into my mornings often.
Fluffy Coconut Protein Pancakes (Makes 1 Serving)
- 1 serving protein powder
- 2 tablespoons coconut flour
- 1 tablespoon whole psyllium husks
- 1 egg & 1 egg white
- 1/2 teaspoon baking powder
- 1/8 teaspoon xanthan gum (I think it would work without as well.)
- 50 ml (2 oz.) and 5 tablespoons of water
- Sweetener of choice (I used two packets of stevia)
- Dash of cinnamon (Optional)
1.) Preheat your stovetop to medium heat. Put some oil (I use olive oil) or non-stick spray in your pan to prevent batter from sticking. Pancake fails are no fun.
2.) Put all the dry ingredients into a bowl and mix. Then add the wet ingredients and mix well.
3.) Take a heaping tablespoon of pancake batter and put it into your pan. Immediately spread the batter around a bit to form a circle, with a spoon. Flip the pancake once one side is done. Repeat this stage until all the batter is gone. It makes about 6 to 7 small pancakes.
4.) Top with your favorite toppings and enjoy!

ReplyDeleteWOW, those look amazing! IHOP couldn't serve more perfect looking pancakes, of course yours are healthier {by far}. I usually have overnight oats or yoghurt with oats + fruit during the week just because it's quick to throw together but during the weekends I try to come up with creative and new breakfast ideas...I can't live on overnight oats every single day, no matter how good they may be!

DeleteFor this recipe I used a German protein powder. The brand is called "Layenberger". I just finished my last tub of protein powder from that brand and am going to try out some other ones. :)
These look fabulous! I love coconut flour, but every time I try making pancakes with it, they just don't cook all the way through and end up gloopy. I think I need to experiment more with my flour/liquid ratios...

DeleteI've never tried making vegan pancakes before so I'm honestly not sure how they would turn out. You could try substituting all the non-vegan ingredients. If you do try it out, I would love to know how it turns out. :)

i'm obsessed with coconut.. and these look delicious!! i don't have any psyllium husks on hand, though - is there something i could substitute for them or is it possible to leave them out?

I usually use the microwave when it comes to breakfast...even on the weekends I'm lazy to make anything like pancakes on the stovetop!

Those pancakes look fantastic! I make pancakes (or one massive pancake) every friday morning as a reward of getting through the rough work week (I work from home on fridays). It's a great start to the weekend!
